Songkran / Mango Sticky Rice Cups

Mango Sticky Rice Cups

Children assemble small cups of coconut sticky rice topped with fresh mango, a sweet treat enjoyed in Thailand during the hot season when Songkran falls.

How to run it

  1. Ahead of time, soak glutinous rice overnight, then steam or cook it in a rice cooker with a little extra water.
  2. Gently warm coconut milk with a little sugar and salt, then let children stir it through the warm rice.
  3. Have children wash hands and help slice mango cheeks into cubes with child-safe knives.
  4. Spoon rice into cups, top with mango and a drizzle of coconut sauce, and sprinkle with toasted sesame seeds if allergies allow.
