Nowruz / Baked Kuku Sabzi Bites

Baked Kuku Sabzi Bites

Children chop fresh herbs and whisk eggs to make kuku sabzi, a green herb frittata often eaten at Nowruz, baked as bite-sized squares to share.

How to run it

  1. Explain that green herbs are eaten at Nowruz to welcome spring and new growth, and kuku sabzi is a popular dish for the new year.
  2. Have children wash and finely chop parsley, coriander, dill and spring onion with child-safe knives or kitchen scissors.
  3. Whisk eggs with a pinch of turmeric, salt and a spoonful of flour, then stir in the herbs.
  4. Pour into a lined, oiled baking tin and bake at 180°C for 25 to 30 minutes until set, then cool and cut into squares.
